A Legacy of Greenwich Recipes from Generation to Generation are recipes handed down to contributors by their ancestors. Some of them date from Colonial times. Many of the people who originated these recipes died many years ago. And that is the main reason for this cookbook. We want you to have something that was part of the heritage of East Greenwich - something that you can share. Some of the recipes were handed down by word of mouth and the directions were very sketchy, of not non-existent. We have updated them for you, as we have tested them in our kitchens. At the same time, we have tried to keep the authentic flavor of their "receipts" or "rules" from handwritten books. Often we have tried to accomplish this through sketches, anecdotes, asides and comments. To all of those hard-working women who made use of what was at hand and passed down their receipts from generation to generation. There seems to be in this country, a "going back" to American foods of earlier generations. People are remembering the food they ate as children and want to again enjoy meals like they had at grandma's.
