Leave it fresh or cure it for the perfect smoked sausage flavor. Use pork or a combination of your favorite meats with pork fat, such as beef, deer, elk, moose or antelope. Coarse grind 25lbs of pork 70/30 blend or your favorite meat. Add 12 oz water and 1 bag of seasoning. Fine grind through a 3/16ths inch plate. Keep fresh and cook to 155 degrees F, or smoke with your favorite wood flavors.
