What makes us different is that we don’t wait until winter when the olives are over-ripe, like other brands do. Instead, we harvest in the Fall, when the olives are at the peak of freshness: green, with just a hint of violet. Olives then come to our state-of-the-art mill to produce brilliant oil. We immediately store the oil in a climate-controlled cellar until packaged in our FlavorLock Box. We taste test each batch before packaging it in a proprietary oxygen-free FlavorLock Box. This is the only packaging that protects the oil from flavor damaging light and air to the very last drop.
