Garam Masala is usually added as a last step to Indian food, as the dish is simmering. I think it helps ‘pop’ the many flavors of other spices (like turmeric, cayenne, etc.) that used to make Indian food. It has a warm and earthy fragrance of clove, cinnamon, and cumin.
