East African food has many influences, most importantly Swahili cuisine. Most countries along the Indian Ocean speak the Swahili language and have similar dishes. We use mild spices and hot spices in a moderate way, as well as aromatic spices and herbs. Our typical food in East Africa is Ugali, made with maize or corn flour and accompanied by vegetables, fish, and meat. Ugali, maize, rice, cassava, wheat, and sorghum are popular staple foods in East Africa. This will be your favorite book for those who like to explore different dishes worldwide. The book consists of 180 dishes popular in East Africa (Swahili cuisines). The book has been categorized into soups, snacks and bites, starters, main dishes, salads, desserts, and teas. We only have a few sweets in our societies. I have included a few of them. Most of the recipes included in this cookbook are my cooking style.
