One degree Brix is the equivalent of 1 gram of sucrose in a 100 gram sucrose solution. Therefore, Brix is actually the percent by weight (% w/w) of sucrose in a solution. A refractometer with a Brix scale is often used for measuring the sugar concentration in fruits, vegetables, juices, soft-drinks, as well as wine and beer making.
The Brix scale is also widely used for many non-sugar applications, such as metalworking fluids, where people are interested in total dissolved solids. In these applications, the known concentrations of reference fluids are measured on a refractometer, relative to the Brix scale, and the relationship between Brix and concentration is graphed. The concentration of future samples can be easily determined by measuring the Brix value of a fluid on a refractometer and using the chart to convert the Brix reading into the required unit of measure.
