Miyabi artisans then perform the Honbazuke sharpening method that originated from traditional Japanese sword making. This 3-step process includes sharpening the blades twice on whetstones, followed by mirror polishing on a leather wheel. Used over 1000 years ago for samurai swords, this is what gives these knives their signature Miyabi razor sharpness.
