SINGLE ORIGIN CHOCOLATE: Our Single Origin chocolate bars are made with cacao sourced from six provinces in southern Vietnam. The climate, soil, and water of each province (call it terroir if you want) as well as the mix of cacao varieties and post-harvest practices contribute to the different flavors of each origin, which in turn make the different flavours of each bar. BEAN TO BAR MANIFESTO: In 2011, when we came up with the peculiar idea to make chocolate using only Vietnamese cacao and to manufacture it in Ho Chi Minh City. We had never heard the term, "bean-to-bar", but we soon did and all of a sudden felt like we were part of something larger than just creating a local food business. We roast the cream of each crop of Cacao in small batches. Marou evokes many thoughts and emotions. From exhilaration, lust, fear, and back to comfort. It is an incredibly complex and exotic chocolate. Using 100% Vietnamese ingredients including shade grown cacao from 6 different provinces, Marou captures aromas and flavors never before experienced by our Western palates. The two French expatriates behind Marou live in Vietnam make chocolate that is a cousin to French, but distinctively Vietnamese.
