Chicory (Cichorium intybus) is a perennial herbaceous plant known for its striking sky-blue flowers that open in the morning and close up by afternoon, earning it the nickname "blue sailors." Growing 2-4 feet tall, it has a sturdy, branching stem with sparse, lance-shaped leaves and blooms from summer to fall, attracting bees, butterflies, and other pollinators. The plant thrives in full sun and well-drained soil, tolerating poor, rocky conditions, which makes it a common sight along roadsides, fields, and disturbed areas. Beyond its culinary uses, chicory has a history in herbal medicine for its supposed digestive and anti-inflammatory benefits, and its vivid flowers add a wild, natural beauty to landscapes. The plants will reach a mature height of roughly 24 to 60 inches tall and will span from 12 to 18 inches wide. Chicory, often referred to as Italian Dandelion, will grow quickly from seeds, establishing a deep taproot. This root system will allow them to survive in dry areas, with little to no moisture. Chicory will also use this deeply established root system to return the following growing season after all plant life above surface has wilted. These plants are known to attract an array of beneficial insects, such as butterflies, bumblebees, ladybugs & hummingbirds.
