Standing Fork Salute is as much a food history and travel log as it is a cookbook with over 300 recipes. How certain foods became part of our daily diet has always fascinated the author. Dan Curd believes what often appears in print is limited or apocryphal. Anecdotes from his many trips throughout the United States and abroad explain why certain dishes included in the book have become personal favorites. For more than twenty-four years, Curd wrote for Madison Magazine (Madison, Wisconsin). His magazine blog, Small Dishes, received the “Best Blog” award by the Milwaukee Press Club in 2012. His book incorporates memories from many of his favorite eating and drinking establishments both past and present. (There is a directory of 73 of those that have stood the test of time and are still in business today.) Standing Fork Salute will appeal to anyone who likes to cook, eat at locally owned restaurants, or enjoys dining while traveling. A number of the recipes reflect the author's Southern and Midwestern upbringing, however most of America's most beloved regional specialties get attention as well. He also embraces numerous ethnic dishes, now incorporated into our American cuisine. This work is a history of eating in the 20th century, from food fads to old standards. All of the recipes are dishes that can be successfully executed at home by the experienced and novice chef alike. Dan Curd relies on 65 years of cooking experience to offer advice for successful outcomes.
