Home Canning Instructions
Preparation:
- Inspect jars, lids, and bands; discard damaged parts.
- Clean with hot, soapy water. Keep jars warm to avoid breakage. Never heat jars in the oven.
Processing Jars:
- Fill warm jars with food, maintaining headspace per recipe.
- Wipe rims, seal lids finger-tight. Avoid overtightening.
- Release air bubbles with a plastic utensil (not needed for jams/jellies).
Waterbath Canning:
- Submerge jars in 180°F water, covered by 1 inch.
- Boil per recipe time, adjusting for altitude.
- Cool jars for 24 hours. CAUTION: Jars will be hot. Do not retighten bands.
- Check seals; store in a cool, dark place. Lids are single-use.
Pressure Canning:
- Follow manufacturer instructions. Refer to Waterbath Canning for cooling.
