All of them I have made so far have gotten my whole family's seal of approval (which is difficult in my house). The food even looks like the food in the photos! Speaking of photos, I believe there is one for nearly every recipe which is a huge selling point for me. The recipes are not complicated, and most do not require a lot of crazy ingredients. I love that you can make these recipes ahead of time, in the crock pot, or freeze them, there's a few that you can make in bulk and freeze for an unexpected guest, etc. My favorite thing about this cookbook is the author's use of coconut oil. Besides being much more heat stable than most oils, it provides a great deal of health benefits, and it was a very nice surprise to see how often it was incorporated into the recipes. We had the roasted cauliflower & chicken curry pasta bake last night (which I had made on Saturday! ). Today I made the Greek salad (YUM!), coconut oatmeal sandwich cookies (DOUBLE YUM!) and plan to make either the roasted veggie & ham overnight egg bake (make tonight and put in the oven tomorrow morning) or one of the 3 cinnamon roll recipes I've been trying to decide between (maple bacon, coconut brown sugar or braving the bulk maple glaze batch - since they freeze well, 36 too many?!). I have the ingredients for 3 more recipes I'm hoping to get to this week (adult tuna melt, easy bake mac n' cheese and salted caramel corn). I also have made the blueberry cardamon coffee cake and it is to die for!! I have always wanted more crumble and more berries and this recipe fulfills both of those needs! The recipes are easy to follow and contain most ingredients the average person has (so no mile long ingredient lists!). I am not big on writing reviews and I have a simple rule regarding cookbooks . . . if you find one recipe that's a keeper then the book has paid for itself. By keeper I mean a recipe that you have tried more than once and that continues to satisfy over time . . . also one that receives positive comments from those enjoying what you prepared and by that I do not mean paying lip service to whomever does the cooking but remarks that truly convey enjoyment of the meal.
