It goes well with fried chicken or barbecued ribs. 4 c. popped popcorn 1 c. yellow cornmeal 2 T. sugar 2 t. baking powder 1/2 t. salt 1 egg, beaten 1 c. milk 1/4 c. oil 1 c. shredded Cheddar Jack cheese 4-oz. can diced mild green chiles, drained 2-oz. jar diced pimentos, drained Check popcorn for any unpopped kernels. In a blender, process popcorn until finely ground; transfer to a large bowl. Add cornmeal, sugar, baking powder and salt; stir well and set aside. In a small bowl, beat together egg, milk and oil; stir into popcorn mixture just until blended. Scatter cheese, chiles and pimentos over batter; stir until evenly distributed. Pour batter into a greased 8"x8" baking pan. Bake at 400 degrees for 25 minutes, or until lightly golden at the edges. Cut into squares. Makes 9 servings.
