Called “the red tea”, rooibos is often compared to black tea because it combines well with milk and thus can replace black tea for a caffeine-free tea. The rooibos shrub grows only in the mountainous Cedarberg region of the western S. African Cape. It is a native member of the “fynbos” biome, part of the Cape Floral Kingdom, the smallest but most biodiverse of the world’s 6 floral kingdoms. A leguminous bush similar to broom, Rooibos has fine needles that naturally start to ferment when oxidized during harvesting, turning from a green to a deep red color.
